INGREDIENTS
4 ½ cups 00 pizza flour
1 ¾ teaspoon salt
1 tsp instant yeast
¼ cup olive oil (optional)
1 ¾ c ice cold water
semolina flour for dusting
DIRECTIONS
1.Stir all dry ingredients together with stand mixer paddle attachment. Stir in the water and combine until absorbed ~30 seconds.
2.Switch to dough hook and mix on medium speed for 5-7 min or as long as it takes to make a smooth dough.
3.The dough should clear the sides of the bowl but stick to the bottom. Add a bit of extra water during mixing if not using the oil to achieve stickiness. Dough should be springy, elastic,
and sticky (not just tacky).
4.Transfer dough to floured counter or wax paper. Sprinkle with more flour and divide into 6 balls. Put them on wax paper that has been floured and spray oiled. Spray or brush balls with oil again before covering with plastic wrap. OR put into individual zip lock bags.
5.Leave in the fridge overnight or up to 3 days. Freeze using individual bags for up to 3 months (transfer to fridge 24 hours before baking).
6.Remove balls two hours prior to bake time. Flour counter or wax paper and mist with oil. Flour the balls and press into ½ inch pucks, roughly 5 inches wide. Flour and mist again and
cover for 2 hours till bake time.
7.Use pizza stone in bbq grill or super hot oven, 500°. Give it 30 min or more to heat up. Pizzas take 5-8 min to bake. Use semolina generously for dusting the peel.
